My siblings and I inherited this unique gene from our mother called “Trial and error.” My mom loved to bake but never follow a recipe; she said baking is all based on the feel and the taste of the dough.
I am not a person who likes to follow instructions either—a thinker. Every morning before I get out of bed, I think through my tasks for the day, especially planning for the meals. During my thinking process, I decided to make a snack.
While lying in bed, I came up with this recipe that makes 30 to 40 savory chips.
1-1/2 cup of flour
1/4 cup of cornmeal (optional)
1/4 teaspoon of baking powder
1-1/2 cup of chopped cilantro
1/4 cup of chopped onion
1/2 teaspoon of garlic powder
1/4 teaspoon of black pepper
1/4 teaspoon of salt or to your taste
One teaspoon of sugar
Two tablespoons of oil
Mix all the above ingredients and slowly add warm water while kneading the dough until it feels elasticky (not soggy). Sprinkle some flour on a counter surface and start flattening the dough with a rolling pin. Fold and roll the dough a few times to get the ingredients evenly spread out, and to get some air in the chips to make them light and crunchy.
Roll the flat dough into the form of a sausage, and cut into small pieces. Sprinkle some flour on the countertop, then flatten the little pieces out, either with your hand or a rolling pin (can roll four pieces at a time).
Spread out the chips on a lined (with parchment) baking tray or sprinkle flour on the pan to prevent the chips from sticking—Bake at 400ºF for 10 – 15 minutes or until brown (keep an eye on it). Let the chips cool down before eating.
I got out of bed and put my thoughts into physical reality. Here is the outcome of the imagination.
